Ingredients

  • For the Filling:
  • 2 packs of halloumi cheese, roughly grated
  • 200 g strained yogurt
  • 3 eggs
  • 6 tbsp finely chopped fresh mint
  • 2 tsp dried mint
  • For the Dough:
  • 500gr all-purpose flour and 500gr bread flour
  • 9gr dry yeast
  • 1 tsp salt
  • 2 tsp sugar
  • 150 ml olive oil
  • 250 ml lukewarm fresh milk
  • 400 ml lukewarm water
  • Sesame seeds for garnish

Instructions

1. Prepare the Dough

  1. In a large bowl, mix the flour, dry yeast, salt, and sugar.
  2. Gradually add the olive oil, milk, and water. Mix until the dough comes together.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Cover with a clean kitchen towel and let it rise in a warm spot for about 1 hour, or until it doubles in size.
  5. Depending on the country you live and the flour you use, you might need more or less water for the dough. You are looking for the dough to be soft but not sticky.

2. Make the Filling

  1. Grate the halloumi cheese into a large bowl.
  2. Add the yogurt, eggs, and chopped and dried mint. Mix well until evenly combined.

3. Assemble the Pies

  1. Preheat your oven to 180°C (350°F).
  2. Divide the dough into  4 equal-sized balls (about the size of a tennis ball).
  3. Roll each ball into a rectangle on a lightly floured surface.
  4. Place a generous spoonful of the halloumi mixture in the center and evenly spread it everywhere. Roll the dough over to form a long roll. Divide in 3 equal sections and cut the pies.
  5. Brush each pie with a little egg and sprinkle sesame seeds on top.

4. Bake the Pies

  1. Arrange the pies on a lined baking tray, leaving some space between each one.
  2. Let them rise for 20 more minutes.
  3. Bake for 25–30 minutes, or until golden brown.
  4. Allow to cool slightly before serving.
