Everyone loves some pie, whether is savoury or sweet. This recipe, is a traditional recipe for a chicken pie with a few minor alterations just to make it more yummy and easier to prepare. For this recipe, I have used chicken breast because no one in my family likes the rest of the chicken haha but feel welcome to use whichever part of the chicken you like. Just make sure to double the amount if you are using drumsticks for instance or thighs. You can roast the whole chicken, prepare the pie and any leftovers can be easily used for some lovely avgolemono soup!

Ingredients
- 2 packets of shortcrust pastry
- 3 chicken breasts
- 200 gr feta cheese
- 250gr mushrooms, chopped
- 1 large onion, finely chopped
- 3 spring onions/finely chopped
- 1 garlic clove
- 2 red peppers, cut in cubes
- 1 cup sweetcorn, from a tin or frozen will do
- 4 tbsp finely chopped parsley
- salt/pepper
- 2 tsp curry powder (optional)
- 3 tbsp olive oil
- 3 eggs
- sesame seeds (optional)
Instructions
Step 1
Place the chicken in a roasting pan, season with salt and pepper add a splash of water and roast in the oven for about 30 minutes. Once cooked, shred using two forks and let aside.
Step 2
Prepare all the vegetables, and place them in a pan along with the olive oil. Saute for 5 to 10 minutes add the garlic and saute for 1 more minute. Let it cool.
Step 3
Pre heat the oven at 180°C.
Step 4
Once the vegetables have cooled down, add the chicken in the vegetable mix and crumble in the feta cheese. Add the chopped parsley, salt, pepper and curry powder.
Step 5
Beat the eggs and add them to the mixture and mix everything together.
Step 5
Oil the bottom of the pyrex with some olive oil. Place the first shortcrust pastry sheet and then the vegetable and chicken mix. Cover with the other pastry sheet and brush the top with some egg wash. Sprinkle some sesame seeds on top and bake for about 60 minutes or until the pie is nicely golden.
Notes
If you want to exclude the curry powder, add some oregano for a more traditional Greek taste. You can add as many or as little vegetables as you like! If you have children and want to ''trick''them into eating some vegetables, add even more! Serve this pie with some tzatziki sauce...it's a powerful combination!
