Assimina is a young mum who lives in Greece with her two boys, Konstantino who is 5 and Antonis who is 3. She loves cooking with her two boys and if they are not cooking together then the boys will be playing with their toy kitchen. Ever since they were babies, Assimina tried baby led weaning and this way the boys got to try different foods. The boys, love to eat vegetables and fruit as snacks.
What works really well for their family is:

-the parents decide when and what the boys will eat
-the boys decide how much to eat

Ingredients
- 500 gr pork minced meat
- 1 cup long grain rice
- 1 egg
- 2 tbsp olive oil
- 2 fresh onions, finely chopped
- 1 tbsp dill, dried
- salt/pepper
- extra 4 tbsp rice
- For the avgolemono sauce
- 1 lemon,juice
- 1 egg yolk
- salt
- 1 tsp dried coriander or nutmeg
- Feta cheese to serve
Instructions
Step 1
In a bowl, add all the ingredients for the meatballs apart from the 4 tbsp of rice. Mix well and shape into small balls
Step 2
In a pot, add the olive oil and the giouvarlakia. Let them saute for 2 minutes and add some water to cover. Let them simmer on a low heat for 30 minutes.
Step 3
Add the 4 tbsp of rice and let is simmer for a further 20 minutes.
Step 4
To prepare the avgolemono sauce, beat the egg yolk with the lemon juice and add the salt and nutmeg in a bowl. Transfer some water from the soup in the bowl, mix and then add the egg sauce in the pot. Mix lightly.
Step 5
Serve with some extra lemon juice, fresh olive oil and dill. And feta of course!
