This is my beautiful sister Yiota and her son Stavros! They live in Cyprus and my sister is a teacher. She is very much into art and everything I know about art I learnt from her as she knows pretty much everything about every painting out there! We have so many life memories together which we randomly remember every now and then and just laugh, I guess that’s what sisters do right? I miss her so much and her little boy who is nearly four years old. Stavros is a lively little boy who is -I think- extremely smart for his age but hey I guess it runs in the family haha. One of Stavros favourite foods is chicken nuggets and Yiota has found a great recipe which is homemade and extra delicious! This dish can be served with some oven chips and vegetables or even tomato rice.
Ingredients
- 2 chicken breasts, cut in chunks
- 200 gr breadcrumbs
- 2 eggs
- salt/pepper
- 1 tsp garlic powder
Instructions
Step 1
Cut the chicken in chunks. Season with salt and pepper
Step 2
Add the breadcrumbs in a bowl and mix in the garlic.
Step 3
Dip the chicken nuggets one by one in the egg mixture first and then the breadcrumbs. Place them in a big baking tray and drizzle some olive oil on top.
Step 4
Bake in a pre heated oven at 180ºC for 30-40 minutes.
Notes
This recipe works fantastically well if you want to freeze the nuggets. Just prepare them, place in a freezer bag and freeze for up to 2 months.
