Lemon Olive Oil Cookies

If you’re a fan of citrusy desserts, you’ll love these lemon olive oil cookies!

These cookies are a refreshing twist on a classic treat with a soft buttery texture and a bright burst of lemon flavor.

Do you know how easy they are to prepare? And bake? It just takes 10 minutes to mix the dough and shape the cookies and 10 minutes or less to bake them.

That’s it! These olive oil lemon cookies scream Greece. They have olive oil, lemon juice, and lemon zest, which I am sure you know makes all the difference.

If you decide to bake these lemon cookies for 10 minutes, then the result will be nice and soft, chewy cookies. If, however, you would like them to have more of a crunch, then bake them for five more minutes and let them cool before enjoying them.

They are not similar to the anise cookies I recently shared with you, but these cookies are equally delicious.

My memories

One summer, when I was a kid, my family went on a road trip and stopped at a roadside fruit stand to pick up some snacks. My mom grabbed a bag of lemons, thinking they would be a healthy and refreshing option.

Fast forward a few hours later, we were driving down a bumpy road, and the bag of lemons fell off the seat and onto the floor. Suddenly, we were hit with the most overpowering scent of lemons you could ever imagine. We had a lemon-scented air freshener on steroids in the car!

We couldn’t stop laughing as we rolled down the windows and tried to air out the car. My dad joked that we could sell lemon-scented car fresheners and make a fortune.

From then on, we always joked about that incident and double-checked that anything we brought into the car was securely fastened. At least our car smelled fresh and citrusy for the rest of the trip!

Ingredients

  • 1/3 olive oil
  • 2 cups plain flour
  • 1/2 teaspoon baking powder
  • 1 lemon, juiced and zested
  • 1 egg
  • 1/2 cup sugar

Instructions

Step 1
Add the sugar, egg, lemon juice, olive oil, and lemon zest in a big bowl. Mix well for about five minutes using a hand whisk.

Step 2
Incorporate the flour and baking powder. Mix well to form your dough. You can substitute with baking soda too.

Step 3
Preheat the oven to 190C. Line a baking tray with parchment paper.

Step 4
Shape the biscuits as you wish. Just make sure they are all the same shape and thickness so they can bake evenly.

Step 5
Bake for 10 minutes (soft cookies) or 15 minutes (crunchy).

Step 6
Enjoy with a hot cup of tea!
