Mediterranean olive pies

This recipe is vegetarian, is super healthy and super easy to make! Eliopitakia or individual olive pies are traditional to Cyprus and are usually served for breakfast or as a snack with the afternoon coffee. They are very popular also during lent because they are filling, healthy and the recipe requires no dairy or eggs! The dough is like any other pie dough with the substitution of orange juice instead of water! How Mediterranean is that??

You can use any type of olives you prefer and like really but, black olives like Kalamata olives are great with this recipe. I used Cypriot olives but I find that black Cypriot olives are quite an acquired taste as they are more salty and dry than the rest. Did you know olives are fruits? And did you know that they are super healthy and good for you so much so that they have anti-cancerous properties and can offer protection against osteoporosis? So many reasons as to why you should incorporate olives and olive oil in your diet and more reasons to make these olive pies other than that they are super tasty!

By the way if you not really into making individual pies then keep reading! Cheating alert!!!

Let’s get baking my darlings!

INGREDIENTS

For the dough

500gr bread flour

250gr plain flour

1 1/2tsp baking powder

1/2 cup sunflower oil

1/3 cup olive oil

1 cup orange juice

1/2 cup lukewarm water

1tsp salt

For the filling

1 cup black olives pitted and chopped

3 spring onions finely chopped

1 bunch coriander finely chopped

1tbsp dried mint

2tbsp olive oil

Sesame seeds to cover the pies (optional)

INSTRUCTIONS

To prepare the dough:

Step 1

Combine all the wet ingredients in the mixer bowl and then slowly add the dry ingredients. Mix the dough on a low setting until you reach the point where the dough is elastic and soft. Let it rest for 30 minutes.

For the filling:

Step 2

In a bowl, mix together all the filling ingredients. Make sure the olives, coriander and spring onions are finely chopped.

Step 3

If you are using sesame seeds, boil it in some water for five minutes, drain and let it cool.

Step 4

Roll out the dough, cut it into discs, using a small plate as your guide.

Step 5

Add the filling in the middle and roll each pie like a croissant. Dip them in the sesame seeds and then place them on a baking tray lined with parchment paper.

Step 6

Line all the olive pies in the baking tray lined with parchment paper and bake in a pre heated oven at 200º for 20 minutes or until golden.

♥ If you don’t really want to follow all the above process (it’s ok we won’t judge haha) then just roll the dough to create a nice big square piece and then damp the whole filling in the middle. Roll into a roulade and hey presto! It can’t get any easier than that! Bake your olive roulade at 200° for one hour.
