One bowl super easy Cypriot halloumi cake Κυπριακο κεικ με χαλλουμι

This savoury cheesecake has saved the life of many women back in Cyprus who get a last minute call for visitors! It’s a one bowl cake with lots of halloumi cheese and mint in it and can be prepared and baked in under one hour! I know, fantastic right? So next time you get a last minute call for visitors and want to have something homemade to offer with their coffee try this halloumi cake. In addition, this cake is absolutely delicious as a breakfast! The eggs, the cheese, the sultanas can even class this as a healthy cake! Or not?

Right, let’s get baking my darlings!

You will need:

1 halloumi, finely grated

1/2 cup finely grated cheddar cheese

5 eggs

1 cup oil

1 cup milk

3 tbsp dried mint

2 cups plain flour

3 tsp baking powder

salt/ pepper to taste

1/2 cup dried sultanas

Are you ready now for the instructions?

Well the only instructions are that you pre- heat the oven at 180°C and you grease a bundt cake tin. In a big bowl, just add all the ingredients together, stir for everything to be incorporated and pour the mixture in the tin to bake for 30-40 minutes. The mixture of this cake is quite wet so don’t be tempted to add more flour. This is it, I promise!!

Ingredients

  • 1 halloumi, finely grated

Instructions

Step 1

Pre-heat the oven at 180°C and grease a bundt cake tin

Step 2

In a big bowl, add all the ingredients and stir well. You will have a wet mixture. Pour the mixture in the tin.

Step 3

Bake for 30-40 minutes. The cake is done when it's golden brown and has doubled in size

Notes

You can always add feta as well or any other cheese you might like.
