One pot Greek food fish soup coming right up. Let me tell you something. This soup is the easiest soup you will ever make in your life. Oh, and most probably the yummiest too! What will take most of your time it’s just cutting the vegetables. I usually prepare this the day before when I know my kids have after-school activities. When we come home, I pop it on the stove, reheat it, and dinner is served. Being Greek, you know we serve this with yummy, crusty bread to soak up all those juices. haha
It tastes like the Sea.
I think this is my favorite soup recipe. It’s packed with goodness; kids love it, and it tastes like the Sea. Wherever you are on this planet, you will instantly be transported by the Sea to a beautiful country when you are cooking it. Pretty much the same way when you are cooking garides saganaki.
My kids
I have two daughters. To say they are entirely different when it comes to their food choices would be an understatement. My eldest is a carnivore. She would gladly eat meat almost daily and doesn’t particularly like fish. My youngest doesn’t particularly like meat, BUT she adores seafood. She absolutely loves fish, mussels, shrimp, crab, anything really! Does that make my life hard? Yes, a lot haha. But I continue to offer both to both of them in the hope that one day they will get to enjoy both equally. High hopes, I know! Having said that, though, my eldest, who isn’t particularly fond of fish, really enjoys this soup! So if your kids are like my daughter, give it a go. You never know!
The Fish
For this recipe, I use frozen fish. Yeap, frozen, deboned frozen fish. One is cheaper to buy, and second, I love the fact of how convenient it is. No bones to worry about, and once cooked, you never know it was actually frozen! I use cod fish for this one pot greek food fish soup, but you can use any fish you like, and of course, it doesn’t have to be frozen.

Step 1 Chop the carrots, potatoes, spring onions, parsley, and celery. Add everything in the pot, along with some olive oil Step 2 Sautee everything on high heat for 5 minutes Step 3 Add the tomato paste, vegetable stock, salt, and pepper. Stir for one more minute Step 4 Add the rice and fish. Stir for two more minutes and add water to cover everything. Step 5 Cook for 30 minutes on low heat.
