Prasorizo is a classic traditional Greek recipe that is both simple and comforting. My husband, who grew up in the Peloponnese, absolutely loves it—and over the years it has become one of his favorite comfort foods. This humble vegetarian dish is packed with flavor and, like many Greek recipes, it uses just a handful of ingredients.

The only part that needs a little extra care is cleaning the leeks properly, since they can trap dirt between their layers. Once that’s done, though, the rest of the recipe comes together very easily.

A Humble and Comforting Dish

Many people who visit Greece believe Greek cuisine is all about meat dishes. In reality, that couldn’t be further from the truth. Traditional Greek food is often vegetarian or even vegan, showcasing seasonal vegetables, herbs, and olive oil.

Prasorizo is a perfect example of this, along with dishes like Arakas (pea stew), spanakorizo (spinach and rice pilaf), and even the rustic Greek-style pizza. They all prove that you don’t need long ingredient lists to create meals that are hearty, filling, and full of flavor.

In our home, prasorizo is always enjoyed with plenty of feta cheese on the side and lots of bread for dipping into the sauce. My husband never fails to mention how much he loves its simplicity and deliciousness.

Tomato or No Tomato?

Traditionally, prasorizo is cooked without tomato. However, in my kitchen, I like to add a little tomato to the recipe—it gives the dish a light sweetness and a richer flavor. Of course, you can keep it traditional and leave it out if you prefer.

Prasorizo Greek rice with leeks

Ingredients

  • four leeks
  • one onion
  • olive oil
  • 150gr long grain rice
  • one vegetable stock
  • fresh dill
  • fresh mint
  • lemon to serve
  • two tbsp tomato passata (optional)
  • salt/pepper
  • 900 ml water

Instructions

Step 1 In a pot, add the olive oil. Finely chop the onion and add it to the pot. Step 2 Wash the leeks thoroughly, pat them dry, and finely cut them. Add them to the pot. Step 3 Sautee the onion and leeks on low heat for about ten minutes. Don't forget to stir them now and then. Step 4 Wash the rice and add it to the pot. Also, add the tomato passata (optional) and vegetable stock. Step 5 Season the food with salt and pepper. Add the water, cover the pot with the lid and let the rice cook for 15-20 minutes on low heat. Stir occasionally. Step 6 When the rice is nearly cooked, add the dill and mint. Let is sit in the pot for five more minutes, lid on. Step 7 Serve warm with some lemon juice, feta cheese, and bread.
