  • 1 large red bell pepper, sliced and cubed
  • 1 medium onion, chopped
  • 1 garlic cloves, minced
  • 3-4 tbsp olive oil
  • Salt and freshly ground black pepper
  • For the Ground Meat Sauce:
  • 500g (1 lb) ground beef, pork or lamb
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 1/4 cup red wine (optional)
  • 400g (14 oz) tomato passata
  • 1 tbsp tomato paste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Optional Garnish:
  • Crumbled feta cheese
  • Fresh parsley

Instructions

  • Prepare the Vegetables:

    • Preheat the oven to 200°C (400°F).
    • Arrange the eggplant, zucchini, potatoes, bell pepper, and onion on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
