Zesty Cranberry orange and white chocolate cookies

‘Tis the season to be baking fa lalalalaala!! I adore Christmas I really do! I really love how everyone is happy and loving and more in tune with their soul. We are losing our self with every day routine I feel, and Christmas with it’s message that’s all about love helps us search our souls and be a bit more loving, a bit more caring a bit more like we are supposed to be every day!

I also love Christmas because of the food haha! I mean it’s a party of the senses with all the cinnamon and clove scent, the taste of orange zest, and the overload of sugar and meat….Growing up in Cyprus, I got used to having more or less the same foods and desserts every year, which don’t get me wrong they are lovely but it’s unfair when there are so many recipes which are so festive and sensational!

I recently came across these cookies and my oh my they are yummy! It’s a shortbread type with cranberries, white chocolate and orange zest. They are really really good and if you are looking for an easy cookie recipe this Christmas then by all means try this recipe.

Right, let’s get cooking my darlings!

Ingredients

Yields 24 cookies

1/2 cup dried cranberries

3/4 cup sugar

2 1/2 cup plain flour

225gr butter, cubed and cold

100gr white chocolate chips (optional)

1 orange zest

2 tbsp orange juice

INSTRUCTIONS

Step 1

Add the cranberries and half the sugar in a blender and chop finely.

Step 2

In a bowl, add the flour, butter and the remaining sugar. Rub the butter in flour with your hands until the mixture looks like breadcrumbs. Using your fingertips and thumbs take small amounts of the mixture and rub them together, from little finger to first finger. Make sure there are no big lumps of butter.

Step 3

Stir in the butter mixture, the cranberries and sugar, orange zest and orange juice. Mix together well to create a dough.

Step 4

Wrap the dough in clingfilm and let rest in the fridge for 2 hours minimum or 24 hours maximum.

Step 5

Remove from the fridge and shape 24 cookies. Place on a tray lined with parchment paper and bake for 12 minutes in a pre heated oven at 200°. Remove from the oven and let cool. Enjoy with hot English tea or coffee.

♥ I have used the Craisins type of dried cranberries which are easily available.

I also tried using the butter alternative to bake my cookies (Stork baking block) but I wasn’t satisfied. I found the taste to be lacking in comparison to real butter cookies but it’s completely up to you on what you want to use.

If you don’t like the orange taste to be too intense then use the zest of half the orange.
