Brownie style cupcakes with raspberries and Maltesers

Last week I celebrated my birthday. I turned 33 and I had a fabulous day with Kostas and the girls. We went for breakfast and lunch which meant that I didn’t cook that day (hooray!) and then I got to relax on the sofa reading my beautiful cards and opening my presents. 10 years ago, on my birthday I wasn’t really happy. For some reason, even though I was only 23 I didn’t like the fact that I was getting older. But in the summer after my 23rd birthday I got sick, like really sick and had to spend a month in ICU and then I had to go for a heart ablation. Scary stuff and a lot more scary when you are only 23. But the beautiful thing was that I started to appreciate what I was given in life more and now I am very very happy I get to celebrate one more birthday. We often take for granted what we have in life and then life happens and we realise how blessed we were.

So on my birthday this year I baked these brownie style cupcakes with raspberries and Maltesers. It was my treat and they were divine! This recipe only yields six cupcakes so you can have all six on your birthday and go back to normal the next day! Ha only kidding! Oh the best thing is you don’t need a mixer hooray, just a big bowl and a spoon!

For these heavenly cupcakes you will need:

75 gr plain flour
35 gr cocoa powder
70 gr brown sugar
90 gr caster sugar
80 gr melted and cooled unsalted butter
some vanilla
2 eggs
150 gr Maltesers
80 gr fresh raspberries

Just chuck everything in a big bowl and stir vigorously to make a butter. In the end add the Maltesers and raspberries.

Grease and flour a cupcake tray or use cupcake liners. Spoon the mixture and bake in a pre heated oven at 200ºC for 30 minutes.

Ingredients

  • 75 gr plain flour
  • 35 gr cocoa powder
  • 70 gr brown sugar
  • 90 gr caster sugar

Instructions

Step 1

Add all the ingredients apart from the raspberries and Maltesers in a big bowl. Whisk together vigorously to create a butter.

Step 2

Add the raspberries and Maltesers.

Step 3

Pre-heat the oven at 200°C

Step 4

Grease and flour a cupcake tray or use cupcake liners. Spoon the mixture in six cupcake holders and bake for 30 minutes.

Notes

If you would like the brownies to be molten in the middle just bake for 20-25 minutes and enjoy warm. Serve with an authentic vanilla gelato and extra raspberries Enjoy!
