  • 1/2 teaspoon salt
  • 115g (1/2 cup) cold unsalted butter, cut into small cubes
  • 1/4 cup cold water (add more if needed)
  • For the Filling:
  • 3-4 medium ripe tomatoes, sliced
  • 100g (3.5 oz) feta cheese, crumbled
  • 1-2 tablespoons olive oil
  • 1 tablespoon fresh oregano or thyme (or 1 teaspoon dried)
  • 1 garlic clove, minced (optional)
  • Freshly ground black pepper
  • Sea salt (optional, as feta is salty)

Instructions

  1. Make the Crust:

    • In a large bowl, whisk together the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the cold water, 1 tablespoon at a time, and mix until the dough comes together. If it's too dry, add a bit more water, but avoid overworking the dough.
    • Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
