Now, I know what you might be thinking, Anise? Isn’t that the thing that tastes like black licorice?” Yes, my friends, it is. And I can hear some of you groaning already – I know that black licorice is not everyone’s cup of tea. But hear me out! This cake is different.
Now, I know Anise is not the first flavor you think of when thinking about cakes, right? We are more used to chocolate, vanilla, carrot, and so on.
Anise, for me, has always been a flavor I adore. When I was younger, my grandmother would make me an anise tea every time I got sick and add it to our loaves of bread and koulouria/bagels.
It brings back so many happy memories of tasting Anise, so why not include it in a cake too?

This is what I do with my cakes now. I mix all the ingredients in a big bowl and bake. The cakes come out so nice and fluffy, much better than when I used the mixer to mix everything.

Instructions
Heat the milk until it starts to boil. Remove from the heat.
In a pestle and mortar, add 2 tsp of aniseed. Grind that as finely as you can. Add it to the milk to infuse
In a bowl, add the sugar and oil. Mix well using a hand whisk. Then add the eggs and mix some more.
Add the leftover aniseed you didn't grind (whole seeds) in the sugar, oil, and egg mixture. Also, add a pinch of salt and the cinnamon.
Preheat the oven to 180C.
Sift the flour and baking powder and add it to the bowl alternating with the infused milk. Mix until all the ingredients have been nicely incorporated.
Oil or butter your cake tin. Sprinkle the sesame seeds in and add the cake mixture.
Bake for 45 minutes or until nicely golden.
