Greek Tomato Galette

I think Greek food is the best -even if I am biased- and here’s why! Today, I want to share a story about the power of simple ingredients and how they can create something magical. And what better way to show this than with one of my all-time favorite recipes—Greek Tomato Galette.

A Greek Food Family Tradition in Every Slice

Growing up, I spent countless hours in my grandmother’s kitchen, where she taught me that food doesn’t have to be complicated to be delicious.

I remember her pulling fresh tomatoes from the garden, crumbling feta with her hands, and always insisting on using herbs straight from the backyard.

She’d make something simple but bursting with flavor—her secret ingredient was love, of course.

Now, I carry on that tradition in my kitchen. And today, I want to pass it on to you, with a recipe that embodies everything I learned at her side.

The Greek Tomato Galette: Simple, Rustic, and Delicious

A galette may sound fancy, but trust me, this is a rustic, approachable dish that anyone can make. Imagine a flaky, buttery crust wrapped around juicy, sweet tomatoes, all sprinkled with tangy feta and fresh herbs.

It’s a dish that’s perfect for a lazy weekend lunch or a light dinner, and it’s a crowd-pleaser every time.

And the best part? You don’t need any special equipment or skills. Just a rolling pin (or a wine bottle—no judgment here!), a few simple ingredients, and a love for good food.

Why You’ll Love This Recipe

Simple Ingredients: You probably have most of these ingredients at home—tomatoes, feta, olive oil, and flour for the crust.

Versatile: This Greek Tomato Galette works as an appetizer, a light meal, or even a potluck star.

Full of Flavor: With juicy tomatoes, tangy feta, and fresh herbs, every bite is packed with Mediterranean goodness.

Let’s Talk Ingredients

This galette is the perfect example of how Greek food celebrates simple, fresh ingredients. Here’s what you’ll need:

  • Fresh Tomatoes: Choose ripe, juicy tomatoes for the best flavor. If you have a garden, even better—just like my grandma used to do!
  • Feta Cheese: Crumbly, salty, and oh-so-tasty. Feta adds the perfect balance to the sweetness of the tomatoes.
  • Herbs: Oregano, thyme, or even basil will elevate the galette with their fragrant, earthy notes.
  • A Buttery Crust: Don’t worry—making your own crust is easier than you think. And trust me, it’s worth it for that homemade flakiness.

The Step-by-Step Recipe

Make the Crust: Combine flour, cold butter, and a pinch of salt. Add cold water until the dough forms. Refrigerate for 30 minutes while you prepare the filling.

Prep the Tomatoes: Slice your tomatoes and pat them dry to remove excess moisture. This keeps your galette crispy.

Assemble: Roll out the dough, crumble feta over the top, and layer your tomatoes. Fold the edges of the dough around the filling, leaving the center open.

Bake: Pop it in the oven until the crust is golden and the tomatoes are perfectly roasted.

A Slice of Greece on Your Table

This Tomato Galette is more than just a dish—it’s a connection to tradition, to family, and to the joy of cooking with simple, wholesome ingredients.

When I make this, I feel like I’m bringing a little piece of my grandmother’s kitchen into my own. And now, you can do the same.

Whether you’re a seasoned home cook or a kitchen newbie, this galette is a fantastic way to enjoy the flavors of Greece. And who knows? It might just become a new family favorite.

Ingredients

  • For the Crust:
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 115g (1/2 cup) cold unsalted butter, cut into small cubes
  • 1/4 cup cold water (add more if needed)
  • For the Filling:
  • 3-4 medium ripe tomatoes, sliced
  • 100g (3.5 oz) feta cheese, crumbled
  • 1-2 tablespoons olive oil
  • 1 tablespoon fresh oregano or thyme (or 1 teaspoon dried)
  • 1 garlic clove, minced (optional)
  • Freshly ground black pepper
  • Sea salt (optional, as feta is salty)

Instructions

  1. Make the Crust:

    • In a large bowl, whisk together the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the cold water, 1 tablespoon at a time, and mix until the dough comes together. If it's too dry, add a bit more water, but avoid overworking the dough.
    • Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Tomatoes:

    • Slice the tomatoes and lay them on a paper towel. Lightly salt them and let them sit for 10-15 minutes to draw out excess moisture. Pat them dry before using to prevent the galette from becoming soggy.
  3. Assemble the Galette:

    • Preheat the oven to 190°C (375°F). On a lightly floured surface, roll out the dough into a rough 12-inch circle. Transfer the rolled-out dough onto a parchment-lined baking sheet.
    • Crumble the feta cheese evenly over the center of the dough, leaving a 2-inch border around the edges.
    • Arrange the tomato slices over the feta, slightly overlapping them. Drizzle with olive oil, sprinkle with fresh herbs, minced garlic (if using), and a little black pepper.
  4. Fold the Galette:

    • Carefully fold the edges of the dough over the filling, pleating it as you go to create a rustic edge. The center of the galette should remain uncovered.
  5. Bake:

    • Brush the crust with a little olive oil or an egg wash if desired, and bake in the preheated oven for 30-35 minutes, or until the crust is golden and the tomatoes are roasted.
  6. Garnish and Serve:

    • Once baked, remove from the oven and let it cool slightly. Garnish with fresh basil or parsley. For a sweet-savory contrast, drizzle with a bit of honey before serving (optional).
    • Serve warm or at room temperature.

Serving Ideas:

  • Pair it with a fresh Greek salad or enjoy as part of a meze platter.
  • Serve with a glass of white wine for a light and elegant meal.
