I love lasagna, I really do but sometimes I find that I want to cook for my family dishes that are meatless. Not in the sense that I would like us to have a vegetarian diet but to avoid meat instead. I know that meat is good for us and I am not a pro vegan or vegetarianism at all especially when young children are involved but I think it’s good to have a few days in the week to enjoy foods that are packed with vegetables and not meat.
This recipe is kinda mainly mine. My girls love lasagna so I was trying to find recipes without meat and I came across lots of recipes with spinach and ricotta. The thing is that day I had lasagna pasta at home and I also had spinach-frozen which is such a convenience- but not ricotta. Obviously, being Greek our fridge is packed with feta cheese so I improvised. Boy oh boy did it work!! Feta cheese and spinach is a match made in heaven but then when you add some pasta and white sauce in the mix, then the flavour just hits the roof!
It’s relatively easy to prepare, it just takes some time. You can of course make ahead too, cover the lasagna with some cling film and let in the fridge to bake whenever you are ready! Serve with a lovely leafy salad and Bob’s your uncle!

INGREDIENTS
500 gr lasagna pasta
750 gr frozen spinah
500 gr passata
2 tbsp olive oil
2 garlic cloves
300 gr feta cheese
1 onion finely chopped
2 tsp oregano
salt/pepper
For the white sauce
100 gr butter
80 gr plain flour
1 L milk
salt/pepper
some Parmesan cheese
INSTRUCTIONS
Step 1
Prepare the marinara: In a pan, add the onion and the olive oil and saute the onion for a few minutes. Add the garlic and saute for a minute. When the onion and garlic are ready, add the passata, salt, pepper and oregano and simmer for 10 minutes. When it has thicken, remove from the heat and let it cool.
Step 2
Prepare the lasagna: Place the lasagna in a baking dish. Boil some water and cover the lasagna sheets.Remove from the water after 10 minutes.
Step 3
Crumble the feta cheese in a bowl.
Step 4
Thaw the spinach in a pan. Add some water, cover with a lid and let the spinach thaw slowly. It’s ready when all the water has evaporated.
Step 5
Assemble the lasagna: Drizzle some olive oil on the bottom of a baking dish. Place some lasagna sheets on top to cover all the surface. Pour some marinara and layer with spinach and some feta cheese. Repeat to create two layers of lasagna.
Step 6
Prepare the white sauce: Melt 100g of the butter in a pan and whisk in the flour. Cook for 1 to 2 minutes, then whisk in the milk till smooth. Season with salt and freshly ground black pepper, and simmer for 5 minutes until it starts to bubble. Pour on top of the lasagna. Sprinkle some Parmesan cheese.
Step 7
Bake in a pre heated oven at 200°C for one hour.
