Halloumi rolls are a staple in my house when my daughters have a playdate with their friends. Kids love halloumi cheese, and these rolls are so easy to prepare! Only here to make your life easier, my friend!
The great part about this recipe is that you can substitute the cheese if you don’t like halloumi ( God forbid there is a person who doesn’t like halloumi). You can substitute it with feta cheese, and instead of mint, add oregano. I guess goat’s cheese is another option, but I don’t see that being too child-friendly.
This recipe is great if you have friends over and want to offer them something homemade; as I mentioned, it’s child friendly (and not just with Greek children, haha), and the added bonus is that it freezes perfectly. So if you are in the mood, double the recipe below and freeze the rolls you don’t need. Then when you want to serve them, defrost and if you have an air fryer -or even in the oven- reheat them and enjoy them warm! Oh, I also baked these for a picnic; they were a real hit!
The recipe
The recipe, as you will see below, is super easy. Cut the cheese into small pieces, melt the butter, mix the rest of the ingredients, and bake! I swear it is that simple. The dough in Greek is called kourou because it has yogurt, making the rolls super soft and yummy.
One of the most loved recipes in my blog is this traditional halloumi pies. Even though they are tasty, they require some preparation time, whereas this recipe is extremely fast to prepare and then bake.

Instructions
In a small pan, add the butter and melt over medium heat.
Cut the halloumi cheese into small cubes.
Add the flour, baking powder, salt, and dried mint in a bowl and mix lightly.
Once the butter has cooled off lightly, mix in the yogurt, olive oil, and two eggs. Mix everything well.
Preheat oven to 180 degrees and line a baking tray with parchment paper.
Now mix the wet ingredients with the dry ones. Add the halloumi cheese and combine well.
Using two big spoons, scoop some mixture and place it on the parchment paper. Use the second spoon to help you slide the mixture off the first spoon. Alternatively, roll them into small balls.
Bake for 15 minutes or until golden. Enjoy!Notes
