This recipe! This food is absolute heaven! Did you know salmon and mango work so well together? They are such a perfect match and I mean you wouldn’t know right because one is a fish and the other is a fruit! I don’t even know if salmon exists where mango grows? Ha

Well, don’t just take my word for it and try it and make more salsa, like double the recipe because I know you will love this recipe so much you will want to bake some more salmon the next day! So there, I am warning you to make more and I know you will listen to me because you and I have a special connection!

Ingredients

  • For the salsa
  • I large ripe mango
  • 1 red romano pepper
  • 40 gr coriander
  • one medium size red onion
  • Lime juice (2 limes)
  • salt/pepper
  • For the salmon
  • 2 salmon fillets
  • salt/pepper
  • lime zest (1 lime)

Instructions

Step 1

Finely chop the mango, pepper, coriander and onion. Place in a bowl, add the salt and pepper and squeeze the juice of 2 limes. Let it in the fridge to cool for about one hour.

Step 2

Place the salmon in a baking tray, add 50 ml of water. Season with salt and pepper and sprinkle the lime zest. Bake for about 15-20 minutes.

Step 3

Serve when the salmon is baked.

You can serve this dish with some fragrant rice on the side
