Lebanese Fattoush salad

I first tried this salad when we moved to the UAE. It’s sooo good!! We used to have it in Lebanese restaurants or even BBQ restaurants with  some shawarma or chicken kebab. The freshness of it and all the ingredients combined together make it the second best salad on my list- for obvious reasons Greek xoriatiki is number one! But trust me, this salad has so many healthy and fresh ingredients  it can be enjoyed as a side or even as a main dish.

I dare you to try it! You will love it and then you won’t stop having it!

Lebanese Fattoush salad

Ingredients

  • 2 romaine lettuce, finely chopped
  • 10 small radishes,cut in 4
  • 1 English cucumber, finely chopped
  • 6 spring onions, finely chopped
  • 4 tomatoes, chopped
  • 1 bunch of parsley, finely chopped
  • 1 bunch of fresh mint, finely chopped
  • 2 medium pitta breads
  • 2 tsp sumac
  • For the dressing
  • 6 tbsp pomegranate molasses
  • 1 lemon, juice
  • 1 tsp sumac
  • 100 ml virgin olive oil
  • salt

Instructions

Step 1

Bake the pita bread at 180°C for 10 minutes or until the pitta bread is nicely golden. Let it cool

Step 2

In a salad bowl, add all the chopped ingredients.

Step 3

Make the dressing by whisking the ingredients together until smooth. Then add salt to taste. Many people like this dressing quite tart but play with the flavors to your palate.

Step 4

Pour the dressing in the salad bowl and break one pita bread into small pieces. Toss everything together, add the other pita bread by breaking it into small pieces as well and sprinkle with some more sumac.

Notes

You can easily substitute tomatoes with cherry tomatoes Make sure to source and use the freshest ingredients When the salad is ready, try it and adjust the flavors to your palate. Add more salt or lemon etc
