Fresh and Flavorful Middle Eastern Salad

When we first moved to the UAE, I was introduced to so many new flavors that quickly became part of my kitchen.

One of the first dishes I fell in love with was Lebanese fatoush.

We used to enjoy it at Lebanese restaurants or even at BBQ spots, often served alongside juicy shawarma or smoky chicken kebabs.

What struck me right away was its freshness. Every bite was a mix of crisp vegetables, tangy dressing, and crunchy toasted pita chips.

To this day, it remains one of my top salads . Coming second only to Greek xoriatiki (Greek village salad), which will always have my heart.

Hence, trust me, Lebanese fatoush is so good, it could easily take first place for many!


What is Lebanese Fatoush?

 Fatoush is a traditional Middle Eastern salad made with a colorful mix of fresh vegetables, herbs, and crispy pieces of pita bread. What’s not to love, right?

Moreover,I really love that the pita is usually fried or toasted until golden, adding the perfect crunch to every bite.

The dressing usually Lebanese use is zesty and bright. It is often made with lemon juice, olive oil, and sumac . If you are not familiar with sumac, it’s a spice that gives the salad its signature tang.

It’s light yet satisfying, making it perfect as a side dish or even as a main course when paired with grilled meats or falafel.

Ingredients

  • 2 romaine lettuce, finely chopped
  • 10 small radishes,cut in 4
  • 1 English cucumber, finely chopped
  • 6 spring onions, finely chopped
  • 4 tomatoes, chopped
  • 1 bunch of parsley, finely chopped
  • 1 bunch of fresh mint, finely chopped
  • 2 medium pitta breads
  • 2 tsp sumac
  • For the dressing
  • 6 tbsp pomegranate molasses
  • 1 lemon, juice
  • 1 tsp sumac
  • 100 ml virgin olive oil
  • salt

Instructions

Step 1

Bake the pita bread at 180°C for 10 minutes or until the pitta bread is nicely golden. Let it cool

Step 2

In a salad bowl, add all the chopped ingredients.

Step 3

Make the dressing by whisking the ingredients together until smooth. Then add salt to taste. Many people like this dressing quite tart but play with the flavors to your palate.

Step 4

Pour the dressing in the salad bowl and break one pita bread into small pieces. Toss everything together, add the other pita bread by breaking it into small pieces as well and sprinkle with some more sumac.

Notes

You can easily substitute tomatoes with cherry tomatoes Make sure to source and use the freshest ingredients When the salad is ready, try it and adjust the flavors to your palate. Add more salt or lemon etc
