These are my angels!
They are my absolute everything in life and I am so honoured and blessed to be their mum! I love them so much and I am sure like all the mothers in the world, I would do anything for them! Nektaria who is now 5 years old, was born in July the 2nd on her actual due date! She is an absolute sweetheart, kind, caring and the most cautious child I have ever seen in my life haha. She is usually the one who will tell her friends what the teacher said they should do and even though that’s a good trait to have in life, I sometimes wish she would relax a bit and be a child. Georgia or Gigi as we call her was born on the 7th of May, is almost 2 and is the complete opposite! She is daring and not really interested in authority always trying out different and sometimes dangerous things. She is -mostly- happy, sweet and always always giving cuddles to people. Her favourite person in the world is her sister Nene, of course! I can’t wait to see how her character will be shaped in the future.
Now that I see them growing up, I realise just how challenging raising girls can be. Girls have many life situations that can become tricky and they should be well equipped to be able to deal with them. One of those situations is their relationship with food and what they perceive food to be. Ideally, I would like to teach them to see food as their fuel and not create an unhealthy relationship like I have with food. So, whilst not obsessing, we have avoided sugar for the first 2 years of their life and try and eat home cooked food. This means that they see me cook for them and a lot of the times they help me cook too which is another very important life skill.
Their favourite food, the food they always say yes and devour a whole plate of is orzo with chicken. They absolutely love it! And I am glad they do as it’s a very easy food to prepare all in one pot and if there are any leftovers just add a bit of water the next day in the same pot and re-heat it to enjoy again!
Right, let’s get cooking my darlings!
You will need:
2 chicken breasts or thighs
1 onion,finely chopped
3 tbsp olive oil
300 gr passata
500 gr orzo
800 ml water
1 vegetable stock cube
2 tsp dried mint
salt/pepper
grated Parmesan or halloumi to serve
Cut the chicken in small cubes and place in a big pot. Add the onion and olive oil. Cook the chicken and onion for 10 minutes approximately.
Pour in the pot the passata, salt, pepper, dried mint and vegetable stock.
Add the orzo and water, bring to the boil and cook until orzo is nice and soft. If you need to add more water for the orzo to cook then add as much needed.
Enjoy with a a bit of grated cheese sprinkled on top. We prefer halloumi cheese but you can easily enjoy it with some Parmesan or Pecorino.

Instructions
Step 1
Cut the chicken in small cubes (if you wish) and place it in a big pot along with the onion and olive oil. Cook them for about 10 minutes.
Step 2
Add the passata, salt, pepper, dried mint and vegetable stock. Cook for 2 minutes and then add the orzo and water. Bring to the boil and lower the heat to low to cook the orzo until soft. If you find that you need to add more water add a bit each time.
Step 3
Serve the orzo with some grated cheese of your choice.
