Quick and easy Greek cheese pie

Greek pies are super easy to make – if you are using shop bought pastry, of course!- and they are super tasty, they last for days and can be enjoyed for breakfast, as a snack, as lunch or as dinner! They are so versatile and the flavour combinations are quite inventive! However, if we were to have a competition, spanakopita and tyropita will win first place!

Greeks love their pies! I remember reading that in the old ages pies were really popular with the field workers and builders as it was an easy food to carry around, it was mess free and of course it was filling! I guess its the equivalent of British Cornish pasties or Serbian and Turkish burek. Nowadays, traditional filo pies have been replaced in big cities in Greece with convenient puff or shortcrust pastries. It’s the pies you can easily find in all the bakeries in Greece and the one I will be sharing the recipe with you today.

Right, let’s get baking my darlings!

INGREDIENTS

2 ready rolled puff pastry sheets

3 eggs

400 gr cheddar grated

150 gr feta cheese

100 gr milk

2 tsp oregano

salt/pepper

extra egg to brush on top

sesame seeds (optional)

INSTRUCTIONS

Step 1

Pre heat the oven at 200°C.

Step 2

Prepare the cheese filling: Beat the eggs till frothy. Add in the grated cheese, crumble the feta and add the oregano, milk, salt and pepper. Go easy on the salt as both the feta cheese and cheddar can be quite salty but be generous with the pepper.

Step 3

Place the first puff pastry sheet in a rectangle baking dish. Add the cheese filling and cover with the second puff pastry sheet. Seal the edges using a fork or your fingers. Brush the top with a beaten egg and sprinkle with some sesame seeds.

Step 4

Bake for 70 minutes or until the pie is nicely golden on the top and bottom.

♥ In England, I prefer the Jus-Rol puff pastry brand mainly because the results are consistent. Some other brands I tried are either not puffy enough when baked or TOO buttery.

As I mentioned before go easy on the salt as the cheese is quite salty. You can of course substitute some of the cheddar cheese with Mozzarella or even Gruyere but it’s going to be a bit more expensive.
