Rose ice cream Παγωτο Τριανταφυλλο

Rose ice cream is the go-to flavor when you are in Cyprus! It’s super delicious and so refreshing in the summer heat. With the pandemic, we won’t get a chance to visit Cyprus and enjoy the real thing, so you can easily make it at home. Homemade! I mean, seriously, the things we do during a pandemic. But what a blessing it is to be healthy and enjoy some family time. Other people, unfortunately, don’t have that luxury.

The best bit

The best bit it’s that it’s churn free and super easy to prepare! Rose ice cream has always been my favorite flavor. We used to get an ice cream van to visit our neighborhood every summer afternoon, and ever since I could walk, my parents told me that I would go out, stop the van and ask for ‘tratrafilo’ice-cream!

Rose

Rose flavor is a very traditional middle-easter flavor. In Cyprus, we use it in many desserts like kourampiedes, galaktoboureko, pourekia, loukoumi and many more! I don’t personally like it in other desserts and you can easily spot that in my recipes.

Of course, some ladies use rose water as face toner! My great-grandmother used to do it, and I can proudly share I do too! Not sure if it helps the skin at all but it is definitely refreshing.

Making memories

One thing I am enjoying with this pandemic is how much time I get to enjoy with my girls and husband. We were always on the run and never really spent quality time together. This situation though has grounded us and had the opportunity to enjoy so many things. Going out for walks, playing games, watching movies, and cooking together. I mean, we even made some halloumi cheese!

Rose ice cream

Ingredients

  • 400 ml double cream
  • 397 gr condensed milk
  • 3 tbsp rose syrup
  • 2 tsp edible rose water (optional)
  • pink food coloring (optional)

Instructions

Step 1

Place the cream and condensed milk in the freezer for 20-30 minutes.

Step 2

Remove the milk and cream from the freezer and pour the double cream in the mixer bowl. Whisk on high speed to double in volume and becomes fluffy. Once ready, pour the condensed milk in and whisk to incorporate it with the cream.

Step 3

Add the rose syrup and mix well. This is the moment you can add  the rose water and colour (I omitted the rose water)

Step 4

Place in an airtight food container, cover with cling film and close the lid. Place it in the freezer and chill for 1 day before enjoying.

Hi, I’m a little confused…
in 🔸step 1
you say put ( cream )and (condensed milk) in freezer ,
You then go on to say
🔸step 2
Once ready,( pour the condensed milk in )and whisk to incorporate it with the cream … please can you clarify what is what?

Hi and thank you for your message. The first step is to put the double cream and condensed milk in the freezer and after 30 minutes to take them down. Whisk the double cream until fluffy and it has doubled in size and then add the condensed milk. Fold it in and then add the rose syrup. That’s it 🙂 Do let me know if that’s more clear xx

Hi, I made this but the taste is not very rose, more so just the condensed milk and cream. Any suggestions if I make again to make it more flavorsome?

Hi Nicola, thank you so much for your comment and trying the recipe. I am sorry it didn’t taste right for you. The only thing I can think of that might have affected the taste is the strength of the syrup used. The rose water is definitely not required as most of the taste comes from the syrup. I used the brand ‘Monin’and 3tbsp were more than enough xx
