Super easy apple traybake

My daughter’s school is always trying to raise money for all sorts of activities and one of the best ways to raise money is by selling cakes! Surprise surprise haha. So because I bake cakes -obviously- I got involved. However, not every time the school requires a cake I have the time to bake it or even sometimes the energy to make something elaborate. So if you are like me and want to bake something for a cake sale but don’t have the time to bake something too extravagant, then just check out this recipe! Is simple, delicious, healthy-ish, quick and quite affordable!

Ingredients

  • 400 gr sweet apples
  • 220 ml sunflower oil
  • 280 gr brown sugar
  • 4 eggs
  • 2 tbsp greek style yogurt
  • 370 gr self raising flour
  • 2 tsp baking powder
  • 2 tbsp cognac (optional)
  • 2tsp cinnamon

Instructions

Step 1

Heat oven to 180C. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples. Set to one side

Step 2

In a mixing bowl, add the oil and sugar. Mix for a couple of minutes and then add the eggs one by one mixing the mixture as you go along. Then add the cognac, yogurt and cinnamon. Mix to incorporate. Add the flour and baking powder and mix to incorporate as well.

Step 3

Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then pour over the rest of the cake mixture. Arrange the rest of the apples on top.

Step 4

Bake for 40 to 45 minutes or until cake is thoroughly baked.

Step 5

Sprinkle with some icing sugar or demerara sugar, cut into squares once cooled and enjoy!

Notes

You can always replace the cognac with vanilla and the self raising flour with plain flour. If you opt for that, then add 3 tsp of baking powder instead of 2 Oh you can always replace the brown sugar as well with regular sugar. You won't get that brown colour of the cake though
