Traditional halloumi pies Χαλλουμοτες

Growing up in Cyprus, and being exposed in all sort of recipes including halloumi I have to share with you these super easy and scrummy, yummy halloumi pies. They are pretty convenient to take with you at work or school and they can freeze as well! Just defrost, heat up for 15 minutes and hey presto you have hot, fresh halloumi pies on your plate again!

This recipe, is not the one I learnt from my mum and nan but instead is the recipe used in bakeries. Soon, I will share with you my family’s recipe as well.

For now, let’s get baking my darlings!

Ingredients

  • 225gr halloumi,cut in small squares
  • 500gr plain flour
  • 1 tsp active yeast
  • 1 tsp sugar
  • 1/3 cup olive oil
  • 1 large onion, finely chopped
  • 1/2 tsp salt
  • 2 tbsp dried mint
  • 2 tbsp sesame seeds

Instructions

Step 1

In a bowl, mix together the flour,salt and olive oil. Rub the two together using your fingers until the mixture resembles breadcrumbs.  Then, mix some warm water, the yeast and sugar and let it stand for 10 minutes. The yeast is active when foam is created on top of the mixture. Add the yeast mixture in the flour, some more warm water and knead for 10 minutes. You are looking for a dough that's not yet or dry.Let the dough double in size, approximately 1 hour.

Step 2

When the dough is ready, pre heat the oven at 180°C. Roll the dough thinly into a rectangle. Spread the halloumi chunks, chopped onion and dried mint over the entire surface.

Step 3

Roll the dough into a cylinder shape, starting with the bottom edge, and then cut into 8 slices.

Step 4

Place the pies on a baking tray lined with parchment paper and sprinkle the top with some sesame seeds. Bake for about one hour.
