Prasorizo is a traditional Greek recipe that many people enjoy. My husband is one of them! It’s a vegetarian dish, and as you have learned so far from the other recipes I am sharing, super easy. The only thing you should be a bit careful with this recipe is cleaning the leeks, as they can be tricky.

A humble dish

Many people visiting Greece have the misconception that Greek people only eat meat. That’s far away from the truth, though! Traditional Greek cuisine mostly consists of vegetarian or even vegan dishes and are all quite humble in their ingredients. Take this pea stew, for example. Or this prasorizo. Or even this greek pizza. They only have a handful of ingredients but are always so feeling and tasty!

I learned to cook this dish when I first met my husband, who is Greek from the Peloponnese. He loves dishes like this because he gets to eat lots of feta with them and dip his bread in the sauce. After so many years of being together, I think it’s his comfort food. He even loves spanakorizo—spinach with rice pilaf.

Every time he eats this food, he would always comment on its simplicity and deliciousness.

Traditionally, this recipe doesn’t include tomato, which you can exclude from the recipe if you wish. I am just sharing the recipe we eat at my home and thoroughly enjoy!

Prasorizo Greek rice with leeks

Ingredients

  • four leeks
  • one onion
  • olive oil
  • 150gr long grain rice
  • one vegetable stock
  • fresh dill
  • fresh mint
  • lemon to serve
  • two tbsp tomato passata (optional)
  • salt/pepper
  • 900 ml water

Instructions

Step 1
In a pot, add the olive oil. Finely chop the onion and add it to the pot.

Step 2
Wash the leeks thoroughly, pat them dry, and finely cut them. Add them to the pot.

Step 3
Sautee the onion and leeks on low heat for about ten minutes. Don't forget to stir them now and then.

Step 4
Wash the rice and add it to the pot. Also, add the tomato passata (optional) and vegetable stock.

Step 5
Season the food with salt and pepper. Add the water, cover the pot with the lid and let the rice cook for 15-20 minutes on low heat. Stir occasionally.

Step 6
When the rice is nearly cooked, add the dill and mint. Let is sit in the pot for five more minutes, lid on.

Step 7
Serve warm with some lemon juice, feta cheese, and bread.
