Jeweled rice is a recipe I first learned while living in the UAE, and it quickly became one of my favorite dishes to prepare. It’s vibrant, aromatic, and surprisingly easy to make. Traditionally served alongside lamb, it also pairs beautifully with roast chicken or other festive meats.
This dish is called jeweled rice because of its stunning appearance: golden grains from turmeric, layered with warm spices, and decorated with pomegranate arils (the jewels of fruit), sweet sultanas, and crunchy pine nuts. It looks just as spectacular as it tastes.
Why Jeweled Rice Is Perfect for Easter
If you’re searching for the ideal side dish to serve with Easter lamb, look no further. Jeweled rice is quick to cook, requires minimal prep, and delivers big flavor without extra fuss.
When we’re hosting, we want everything to flow smoothly, and this rice dish truly fits the bill—beautiful presentation with very little effort.
The Secret Is in the Spices
The magic of jeweled rice lies in the combination of spices. While cinnamon is often the standout note, the real beauty is how all the spices work together.
Traditional Persian jeweled rice recipes often include cardamom, but here’s my personal twist: I skip it! Let me share a little story.
When I was pregnant with my eldest daughter, I craved cinnamon rolls—or at least I thought I did. I proudly baked a batch from scratch, only to realize the recipe included cardamom. The moment I took a bite, pregnancy sickness hit me hard and stayed for months. Since then, I haven’t been able to tolerate cardamom—or raw onions for that matter! Funny how pregnancy reshapes our taste buds, isn’t it?
So, in my version of jeweled rice, I use a spice blend of:
- Cinnamon
- Cumin
- Black pepper
- Turmeric (for that golden glow)
This mix creates a warm, fragrant flavor profile that pairs wonderfully with the sweet and nutty toppings.
How to Serve Jeweled Rice
Jeweled rice is versatile and festive. Serve it alongside:
- Roast leg of lamb (perfect for Easter)
- Roast chicken or turkey
- Grilled vegetables for a vegetarian option
The pops of color from the pomegranate and sultanas make it not just a side dish but a centerpiece on the table.

Step 1 Boil two cups of water and dissolve the vegetable stock in it. Add the salt, pepper, cumin, cinnamon, and turmeric. Step 2 Wash the rice and drain it well. Step 3 In a pan, roast the pine nuts until golden brown. Be extra careful, as they can burn really easily. Remove them from the pan. Step 4 Add some olive oil to the pan. Add the rice, and toast it for about 5 minutes. Step 5 Add the water with spices and cook on low heat for about 10 minutes. Cooking time depends on the rice you will cook, so keep an eye on it. Let it cook just enough - it should be a bit crunchy when trying it. Then, turn off the heat and let it soak up any water for about ten minutes. Step 6 To serve, fluff the rice with a fork. Place the rice on your desired serving plate. Decorate with chopped mint, pomegranate seeds, sultanas, and pine nuts.
