Garides Saganaki are such a Greek dish, isn’t it? I love how summery with vibrant colours it is, the aromas from the ouzo, shrimps and parsley! What’s even better, it’s how easy it is to prepare!

Garides saganaki me feta is a dish traditionally prepared in the Greek islands and especially in small psarotavernes (fish taverns). It is called saganaki because it is cooked in a small frying pan called saganaki.

The shrimps are first sautéed in the pan and then deglazed with lots of ouzo. Trust me, that makes all the difference! I particularly like using Ouzo 12, and if you are in the UK and can’t find it easily in shops, then click here. You can find anything on Amazon these days!

Now, when making the tomato sauce for the garides saganaki me feta, using fresh tomatoes are best, of course! Especially, tomatoes which are nice and juicy, but if you cannot, then fear not! I have tried so many passata’s in England, always trying to find the best to use in my recipes and this is the one I definitely recommend!

In some places in Greece, people use hot spicy peppers in their shrimp saganaki too. In this recipe, I personally don’t because I think the flavour of the shrimps, is enough. But you can definitely use any sort of spicy pepper you prefer, including chili flakes.

Make sure to find the best shrimps for this recipe. Your best bet when making Garides saganaki greek shrimps with feta, is to find fresh prawns. If however, you can’t find a good fishmonger close to where you live, try and find whole, big shrimps in the frozen isle of your supermarket. Yes, they cost more than the traditional small, peeled shrimps but trust me, they are worth it!

Final two tips for this recipe.

  1. Try not to omit the garlic!
  2. Buy the best crusty bread, to mop up that tomato sauce!!

Ingredients

  • 20 shrimps
  • 1 onion, finely chopped
  • 1/2 cup ouzo
  • 2 garlic cloves, finely chopped
  • 250 gr feta cheese
  • 2 tbsp parsley, finely chopped
  • 1/4 cup olive oil
  • salt
  • pepper

Instructions

Step 1

In a frying pan, add 1 tbsp olive oil and when it's hot, add the shrimps. Cook them for about 3 minutes, or until they turn nice and pink. Add the finely chopped garlic and let it cook for 1 minute, tossing the shrimps every now and then to incorporate all the flavours together. Then, add the ouzo and let it cook and evaporate for another minute. 

Step 2

Remove the shrimps and ouzo from the pan.

Step 3

Add the rest of the olive oil and onion in the same pan you used to cook the shrimps. Cook the onion on a low heat until soft. Then, add the tomato sauce or fresh tomatoes and let them cook for about 30 minutes on a low heat. You are looking for the sauce to become quite saucy. Add salt and pepper to your preference. 

Step 4

Once the tomato sauce is ready, pour the shrimps back in the pan, stir and then add the feta cheese and parsley.
